Ingredients:

  • 1 pound of lamb
  • 1 pound of beef
  • beef stock as needed
  • 3 tbs of butter
  • 1 tbsp of olive oil
  • 1 small onion
  • 2 large carrots
  • 3 large cloves of crushed chopped garlic
  • 4 or 5 tablespoons of aribiata tomato sauce
  • 1 cup of frozen peas
  • fresh thyme
  • fresh rosemary
  • 3 tablespoons of cumin
  • 3 tablespoons of Worcestershire sauce
  • 6 large Yukon potatoes
  • 1 sweet potato
  • cream
  • butter for mashed potato
  • loads of cheddar cheese
  • a handful of chopped parsley
  • salt to taste
  • pepper

Method:

Boil Potatoes for the mash. (You'll need plenty of butter and cream) Meanwhile cook down the mince in a wide flat pan. not much oil is needed. add a little beef stock if burning too much. Once its all cooked through put aside and mix in the cumin and Worcestershire. Add some butter and a little olive oil to the pan that had the mince in it, once hot add a finely sliced onion and chopped carrot. let this sauté on a low heat for 20 mins or so, then add the garlic and some slat. let it go another 10 mins or so. Then lower heat and add a handful of thyme and pepper. once the carrots are el dente mix back in the mince meat along with some stock. Stir and add the tomato sauce (I use Aribiata for a little extra bite) Once its all hot put into a suitable baking dish and put in the bunch of rosemary, then cover with thinly sliced onion, the grated cheddar and then the mashed potato and bake until brown on the top. Add chopped parsley and serve.
