Notes:
A version of this can also be made just using gravy granules (such as Bistro) instead of the roux, although I would still add the butter of course.
Ingredients:
- 2 tbsps of Butter
- 2 tbsps of flour
- Chicken stock
- Red wine
- Thme
- One tin of chick peas
- Vigin olive oil
- Kosher salt and pepper
Method:
Create a roux with the butter and flour. Then stir in an equal amount chicken stock and red wine. Add thyme. Then add a tin of drained chickpeas along with a little of the liquid. cover and simmer on a low heat until chick peas have softened a little. Add olive oil, salt and pepper to taste. Just before serving stir in a handful of cilantro.
