Ingredients:
- 2 eggs
- splash of water
- 1 tablespoon of olive oil
- a clove or crushed/chopped garlic
- thyme
- salt and pepper
- grated cheese
- oregano
Method:
Mix the eggs in a bowl along with the water. heat small steel pan up to about 150, then low heat. add oil. wait a moment, add garlic. stir for about 1 min, then add thyme and salt. then immediately, gently pour in egg mix. cover pan. wait 2 mins. add pepper, grated cheese and oregano. replace lid for another 45 seconds. Serve folded.
