Recipe Type/meta tags': Side salad

Ingredients:

  • 1 Breast of chicken skinless
  • mayonnaise
  • curry powder
  • lemon juice
  • salt
  • pepper
  • cilantro
  • raisins

Method:


First poach the chicken. To do this pound chicken breast so its an equal thickness throughout. An empty wine bottle works quite well. Then put in bottom of a steel pan big enough to cover it with water. Cover it with water. Put on medium heat to slowly heat up the water. Use a thermometer to wait until the temperature is 175. At this point go very low heat for 5 mins. make sure the temperature does not increase. after 5 mins remove from heat and put lid on it. wait 10 mins. check internal temperature - should be 165. Put it on a plate and cover with foil leave to cool.

Chop cilantro very small and then mix with remaining ingredients.

Then once chicken is cooled, tear into small bite sized pieces, put in fridge to get it nice and cold. then add to the mixture.
