Notes:

Ingredients:

  • 1 Breast of chicken
  • Kosher Salt
  • Pepper
  • 4 tbsps of high heat oil such as Canola
  • butter

Method:

Slice off the fatty bits from the chicken, then dice the rest into 1/2 - 1 inch chunks. Sprinkle liberally with Kosher salt, (Kosher is better for meats) and plenty of cracked pepper. Get it all nice and mixed up. I like to leave the chicken for twenty minutes or so at room temperature at this point. Next, heat a wide frying pan until its around 300f then add the oil, wait until super hot, then throw in the chicken. I usually put a lid on immediately and give it a good shake. Then leave it for 3 minutes on a high/medium heat. after that stir occasionally, try to get the bits browned on all sides.


Once browned, take of heat, and put on a plate and melt butter on it. Serve with steamed veg.
