Ingredients:
- 2 bags of spinach
- One large zested lemon
- butter to taste
- salt
- Splash of rice wine vinegar
Method: boil some salted water. Use tongs to add spinach in batches. It needs to be well soft when you put it aside. Keep doing the batches until all done. Finely chop, then mix in the butter, zest, salt, and vinegar. Serve.
