Ingredients:
- About 8 inches of a cucumber- Chopped to large chunks
- 2 Tomatoes - Large pieces
- 3 tbs Very thinly slices red onion, (about one slice of a large onion for two)
- 2 tbs Finely chopped mint basil
- Olive oil
- Salt
- pepper
- Virgin Olive oil
- Red wine vinegar
Method:
mix all of the above. Cut herbs with a dry knife to keep them fluffy. After mixing put in fridge for about 30 mins before serving.
