Rigatoni with Browned Butter

Ingredients:

  • 2 tomatoes
  • 2 oz or Arugula
  • 9 oz of Rigatoni
  • 2 tbs of butter
  • a clove of garlic
  • 2 tbs of White Balsamic vinegar
  • Parmesan

Method:

Cut the tomatoes into quarters and remove the seeds then mince. Cook the Rigatoni according to instructions. About 3 mins before being done melt the butter on a low heat with the garlic until just turning brown, then add the tomatoes and the vinegar and plenty of pepper. then stir in the arugula then the pasta which should be done.

Serve with grated parmesan.
