Half a shallot
5 tablespoons of canola oil
4 tbsp of butter
2 heaped tbsps of your favorite curry powder
chicken stock as needed
half a cap of rice vinegar
2 pinches of sugar
about a cup of hot water
Bistro gravy granolas as needed
Method:
Heat oil in small pan, add very finely chopped shallot. fry until soft. Then add the butter, as soon as its melted mix in the curry powder. Keep mixing until its all nice and consistent, then start adding chicken stock. add slowly and stir as you go until its good consistency. Then add the vinegar, I like to push the curry to one side and try and burn off the vinegar a bit before mixing it into the rest. Then stir in the sugar. Then taste it. At this point it will probably need diluting to taste. So if its tasting too sharp, add hot water and slowly add gravy granolas until the flavor is where you want it.
