Ingredients:
- Bunch of mushrooms, I usually use roughly the amount of mushrooms that will fill the base of the pan I'm using
- 1 tbs butter
- 1 tbs olive oil
- 2 cloves finely chopped garlic
- salt
- pepper
- white wine
- cream
- thyme
Method:
Heat oil and butter and then add sliced mushrooms and fry for a couple of minutes, then add garlic, for another minute or two. Once mushrooms are cooked through add the white wine, salt and pepper. Allow to heat up a little, then add thyme leaves and cream. Keep the heat very low once cream is being added. gently cook util thickened too required consistency.
This is great as a side to roast chicken or on a pasta.
