Number of servings:
Ingredients:
- A bunch or asparagus
- 3 tbs of canola oil
- 1/2 teaspoon of salt
- 1.5 tbs of sesame oil
Method:
Break asparagus to remove woody stems. Peel the lower 2 inches of each asparagus with a potato peeler. Put the spears in a bowl of cold water for an hour (this helps crisp them)
Heat canola oil in medium steel pan over medium high. When very hot add asparagus and fry for about 30 -40 seconds. Then add the salt and about 4 tablespoons of water, then put lid on pan and turn to low heat and cook gently for 2-4 mins, (depending on thickness) . Remove lid, keep stirring, keep heat on and once the water has evaporated stir in sesame oil and serve immediately.
