Recipe tags: curry sauce shrimp
Serves: 2
Ingredients: (use bullet points below)
- 4 tbsps of butter
- 4 crushed garlic cloves
- 3 tbsps of flour
- 3 tbsp of shawarma spice mix (any curry powder will work)
- a pinch of cayenne to taste
- 1/2 teaspoon of salt
- half a cup of thick cream
- water
- 2 finely choppd tomatoes
- 1 teaspoon of rice vinegar
- 2 pinches of sugar
Method:
Medium steel pan. Very low heat throughout. slowly melt butter, once nearly melted add crushed/chppped garlic. let the garlic soften a little. Then add flour and make roux. Then add spices. stir until paste. add a little water (2 tablespoons) to cool pan and dilute the paste. then add tomatoes followed by cream. keep stirring. add more water to thin out the sauce a little. Then add the vinegar and the sugar, let it simmer for a while to soften the tomatoes. At this point you can add your protein. Shrimp seem to work super well in this dish. but any veg or protein will work too.
