Recipe tags: breakfast, egg
Serves: 1
Ingredients: (use bullet points below)
- 1 egg, well scrambled with a fork.
- 1 tablespoon of water
- 1 tbsp of high heat oil, I use canola
- a tbsp of crumbled feta
- salt and a little oregano
Method:
Scramble egg with the water. Heat a small steel pan to about 300 degrees, use a thermometer. Then add the oil, wait until its about 400, then add egg. It will immediately start going crazy, throw on the feta on top. then slowly tilt pan to get the top mixture to the base. this only takes a minute. when egg runny bits are just done, plate it with the salt and oregano.
Serve with avocado and smoked salmon.
