Recipe

Recipe tags: Italian pasta

Serves: 2

Ingredients:

  • Salted water
  • Spaghetti
  • 2 tbsp Olive oil
  • 2 tbsp butter
  • half pound of bacon
  • garlic
  • chicken stock
  • cherry tomatoes
  • dried oregano
  • dried parsley
  • red pepper flakes
  • cream
  • parmesan
  • fresh basil or parsley

Method:

Bring a big pot of salted-like-the-sea water to boil, add pasta.

Heat pan, add olive oil and butter. Then add bacon and fry on low heat until done. Put to one side. Then add garlic to same pan, and the then add some stock, use a spatula to blend with all the bacon juices. Then add dried herbs, Add stock as needed so it doesn't dry out. Then add cherry tomatoes, and leave covered until they split. Then slowly add the cream and some parmesan until desired texture and continue adding stock. Add just a splash of the salted pasta water before mixing with the cooked pasta.

Finally serve with fresh parsley or basil and a sprinkle of parmesan.
