Ingredients:

  • One Bell Pepper
  • 2 tomatoes
  • 1 cup of chopped cucumber
  • quarter of a red onion
  • sliced olives
  • a good large square of Feta cheese
  • oregano
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of virgin olive oil
  • 1 teaspoon of dijon mustard
  • 1 clove of crushed and chopped garlic
  • salt and pepper

Method:


Slice red onion very finely and submerge in a bowl of ice and water, put in freezer for 30 mins. This will keep it crispy, but take some of the edge of it.
