Curry base

  • 5 tablespoons of canola oil
  • 2 tablespoons of butter
  • Quarter of an medium sized onion
  • 3 Garlic
  • 1/2 inch of ginger
  • 2 tblspns of a pre mixed tomato marinara or similar
  • 3 heaped tblspns of your favorite curry mix
  • water depending on consistency requirement
  • vinegar
  • salt to taste
  • honey to taste
  • cream to taste


Add the chopped onion to a hot pan of the oil. saute at a medium heat for 10 mins or so, add chopped garlic and ginger, allow to gently cook for another 10 mins or so.

Add spices and tomato plus a little hot water. good stir. I like to add the spices just a little before the tomato and water to allow them to settle into the fats first.

I usually cook at low heat for another 20 mins or so adding water as needed.

Finally for the sauce, add the dairy/salt/sugar/vinegar Add these to taste.

Stir in your protein, veg and serve.
