Ingredients:
- One Bell Pepper
- 2 tomatoes
- 1 cup of chopped cucumber
- quarter of a red onion
- sliced olives
- a good large square of Feta cheese
- oregano
- 2 tablespoons of red wine vinegar
- 2 tablespoons of virgin olive oil
- 1 teaspoon of dijon mustard
- 1 clove of crushed and chopped garlic
- salt and pepper
Method:
Slice red onion very finely and submerge in a bowl of ice and water, put in freezer for 30 mins. This will keep it crispy, but take some of the edge of it. Slice everything up into bite sized chunks and mix in a bowl. I like to add the oregano directly to the salad any this point, give it a mix. Then mix the rest of the ingredients to make the dressing, Add. and serve.
