Ingredients:
- Butter
- Chicken sliced thin
- mushrooms
- chicken stock
- white wine
- tyme
- tarragon
- parsley
- baby artichokes (jarred is perfect)
- cream
Method:
Slice chicken breasts in half along the wide side to create thin fillets. ad to pan of heated butter and cover, heat at medium. Once chicken is cooked through, remove and add sliced mushrooms. (Don't crowd the mushrooms) Once mushrooms are done, remove from pan and add stock, white wine and the herbs, then add the a baby artichokes, once its all been simmering for a few minutes, add the chicken and mushrooms and then the cream. slowly simmer for a few more minutes. Serve with mash potatoes.
