Recipe
Curry base
- 5 tablespoons of canola oil
- 2 tablespoons of butter
- Quarter of an medium sized onion
- 3 Garlic
- 1/2 inch of ginger
- 2 tblspns of a pre mixed tomato marinara or similar
- 3 heaped tblspns of your favorite curry mix
- water depending on consistency requirement
- vinegar
- salt to taste
- honey to taste
- cream to taste
Add the chopped onion to a hot pan of the oil. saute at a medium heat for 10 mins or so, add chopped garlic and ginger, allow to gently cook for another 10 mins or so.
Add spices and tomato plus a little hot water. good stir. I like to add the spices just a little before the tomato and water to allow them to settle into the fats first.
I usually cook at low heat for another 20 mins or so adding water as needed.
Finally for the sauce, add the dairy/salt/sugar/vinegar Add these to taste. Also try adding a splash of orange juice instead of sugar for the sweetness.
Stir in your protein, veg and serve.
